The 2 trays are well-made, spring-loaded ice-cube forming trays. (Both are springy enough to work, but 1 tray has more "spinginess than the other"). So, to break-out the frozen ice from each ice-cube tray, simply hold the big end handle, and just grab the tab that is closest to your hand (it sits higher than all the other tabs), and pull it back toward you, then release it.
