Here’s how I reheated and transported it so it’s at serving temp when we arrived. My goal is to slowly get it up to 150 degrees, drive 30 minutes to my friend’s house, and serve it around 145 degrees. You could sous vide it, or put it in the oven for a bit to get it up to serving temp. I’d definitely stay away from the microwave. I’m going to pull it right from the fridge, re-wrap it in foil, put in a foil pan, stick in a few ThermoWorks Signals probes, so I know when it hits my target temp, cover with foil, have another probe monitor oven temp, and then cook in the oven at 225 degrees for about an hour. We’re ready to head out, I put it in our DripEZ bbq blanket, then in the prep tub, where it will stay above 140 for a good couple of hours. The blanket is nice because it is insulated, because it saves you from having to use towels, and the prep tub makes it easy to carry from my house to my car and my car to my friend’s house. This setup works well for a single brisket or pork shoulder, but I’d move up to a cooler or cambro if I had a bunch of meat.
