The Shogun Series 10.5” Sujihiki is the ultimate multi-purpose slicer. The sujihiki (translated literally as 'muscle cutter 'or 'flesh slicer') is also known as a double-bevel or Western-style yanagiba knife. Originally designed for cutting and removing muscles from meat with long draw cuts, the Sujihiki has evolved from its roots in Asian-style preparations, to mastering Western applications as a culinary warrior against all boneless proteins, vegetables and even bread, giving you paper-thin slices. Featuring high-carbon Japanese AUS-10V super steel, the narrow height of the blade minimizes friction while the double patterned Rock-Hollow divots create air pockets between the knife and your food, enhancing non-stick properties.
